How many pieces of hors d'oeuvres do I need to serve?

Timing is everything in calculating the number of hors d’oeuvres you need to serve. For a mid-afternoon cocktail reception lasting two hours, plan on six to eight pieces per person as well as some grazing food. One hour before dinner guests will probably eat four pieces per person. For a two hour cocktail party over the dinner hour, you should plan on twelve to fourteen pieces per person and possibly a food station to ensure guests leave feeling satisfied. Depending on what else you are serving, as a guideline for lunch you should plan on approximately a six ounce portion of protein per guest. For dinner you can consider increasing that serving to an 8oz portion.

How many people do eight inch and ten inch cakes serve?

Usually an eight inch cake will serve approximately six people and a ten inch cake will serve approximately ten people.

What type of food service is appropriate for my event?

This is based on many different variables, including the occasion for the event, time of day and season an event is to be held, the venue the event is being held in, the number of guests to be served, personal style as well as proposed budget. Your caterer can help you sort through the different options.

How much time should I plan on for each course?

Plan on thirty to forty-five minutes per course. The pace is often determined by the menu and is something that should be planned with your caterer.

Is a site visit by my caterer required?

A site visit is often in order if the caterer has never done an event at the venue which you have selected.

How far in advance do I need to confirm my number of guests?

Ten business days in advance is the appropriate time to confirm your guest count with your caterer. However, providing your caterer with a fair approximation considerably earlier will assist you and your caterer to best plan your event.
